Why uninstall? Just don't play until the next update which will apply automatically if the game is still installed and you won't have to start over from the very beginning on a new installation. so right now as I have finished all content, I'll give it a couple of days to finish the last mine, try to min/max the last couple of things and just uninstall this couple of months until next update.
